Refreshing Honeydew Coconut Soup

The casaba soup I made recently was such a hit that I was curious to see what other twists I could come up with in melon soups.

This recipe is dairy free, with whole orange & lime plus a generous amount of coconut oil, all to add body in place of yogurt.

You’ll Need:

1/2 honeydew melon, peeled, seeded & roughly chopped

2/3 c coconut milk

3 tbs coconut oil

A peeled and seeded navel orange roughly chopped

The zest (no white pith) from the same orange

A peeled and seeded lime roughly chopped

The zest (no white pith) from the same lime

A dozen mint leaves

1 tbs minced ginger

1 tbs honey

A blender

Steps:

1. Put everything in the blender & process until smooth.

2. Refrigerate a few hours to allow flavors to meld.

Serves 4
