Hoisin Duck in Lettuce Leaves

This is super easy if you can buy a roasted duck. In my area, several stores sell them. If you can’t locate a prepared duck, try this with a rotisserie chicken instead!

You’ll Need:

3 cups cooked duck meat, cut into bite sized pieces

1 carrot, small dice

1/2 an 8 oz can of diced water chestnuts, drained

1 tbs canola oil

1 tsp minced Ginger

1 tsp minced Garlic

1/2 tsp 5 spice powder

3 tbs Hoisin Sauce

A small handful of cilantro, roughly chopped

The whole leaves from a head of Boston or Bibb Lettuce, washed and dried

A wok or large fry pan

A platter

Steps:

1. Heat the canola oil over high heat til it shimmies.

2. Add the ginger & garlic & stir fry for a minute.

3. Add the carrots & water chestnuts & stir fry another minute.

4. Add the duck & stir fry til it’s heated thru, just a few minutes.

5. Add the 5 spice powder & stir.

5. Add the hoisin sauce and stir fry another minute.

6. Spoon the duck mixture into a lettuce leaf, leaving it full but not overloaded.

7. Repeat and place all the filled lettuce leaves on a platter, then sprinkle with cilantro & serve.
