Spicy Stir Fry Chicken with Vegetables

This is one of those recipes where you can change up the vegetables and still have a delicious dish.

I most often prepare it with asparagus, which I love, as pictured. But other fabulous vegetable options would be broccoli, peppers, or cabbage.

The critical thing is having all the ingredients fully prepped before you start cooking. But 20 minutes of prep and 10 minutes of cooking is all it takes!

You’ll Need:

1 1/2 lbs boneless chicken, cut into small thin strips

4 scallions, sliced

1/2 tsp salt
1/2 tsp pepper

2 tbs canola oil

2 1/4 tsp minced garlic

2 tsp minced ginger

1 bunch asparagus, cleaned & sliced into 1″ lengths

1 small can sliced bamboo shoots, drained

1 scant handful of dried Chinese mushrooms, soaked in boiling water til softened, and then thinly sliced

6 tbs broth (chicken or vegetable)

3 tbs hoisin sauce

1 tbs oyster sauce

2 tsp chili sauce with garlic

1 tbs sesame oil

1 large bowl for the chicken

1 medium bowl for the vegetables

1 small bowl for the sauce

A wok or frypan


1. In the large bowl, combine the sliced chicken, sliced scallions, salt & pepper. Set aside.

2. In the small bowl, combine the hoisin, oyster sauce, chili sauce, sesame oil and 2 tbs of the broth. Set aside.

3. In the medium bowl combine the asparagus, mushrooms & bamboo shoots. Set aside.

4. In the wok, put 1 tbs of canola oil, turn to high, and when the oil starts shimmying, add the garlic & ginger, and stir fry 30 seconds.

5. Add the asparagus, mushrooms & bamboo shoots & stir fry for 1 minute.

6. Add the remaining 4 tbs of broth, cover & cook for 2 minutes more.

7. Remove everything from the wok & put it in the bowl that had held the raw vegetables.

8. Put the remaining 1 tbs of canola oil in the wok, set it to high, and when the oil starts shimmying, add the chicken & scallion mixture. Stir fry several minutes until the chicken turns white.

9. Add the sauce mixture to the wok and stir well to blend with the chicken.

10. Add back the vegetables, stir fry another minute or two until everything is well combined & hot.

11. Serve with rice.
