Crispy Tasty Juicy Oven Baked Chicken

What’s the secret to crispy tasty juicy oven baked chicken? Marinading the chicken in a highly seasoned egg & milk bath!

You’ll Need:

2 split chicken breasts, halved

4 chicken thighs

2 eggs

1/4 cup milk

1 tbs dried rosemary

1/8 tsp cayenne

1 tsp onion powder

1 tsp garlic powder

1 tsp salt

1/2 tsp pepper

1/2 tsp paprika

1 1/2 cups Italian seasoned breadcrumbs


A large bowl for marinading all the chicken

A bowl to hold the breadcrumbs

A roasting pan large enough to accommodate the chicken in a single layer with room between each piece


1. Combine the eggs, milk, rosemary, cayenne, onion powder, garlic powder, salt, pepper, & paprika in the large bowl.

2. Add the chicken, turning to coat all sides.

3. Cover and refrigerate the chicken in the bowl for 2 hours.

4. After 2 hours, turn the chicken so the other side is sitting in the egg bath, then recover and refrigerate another 2 hours.

5. Pour EVOO into the roasting pan, enough to coat the pan well.

6. Turn oven to 375, and if you have a convection fan, turn it on.

7. Dredge each piece of chicken in breadcrumbs & place in the roasting pan, skin side up.

8. Drizzle the top of each piece with just a dash of EVOO.

9. Bake for 45 minutes, until the chicken is very well browned.
