Ricotta Bites with Honey & Thyme

February 6, 2012

A few years ago I fell for a ricotta appetizer at a restaurant, and then successfully re-imagined it at home.

I’ve served it countless times since and nearly everyone has asked me for the recipe, delighted that something so unique and wonderful was also so blissfully simple to prepare.

It’s perfect party food too! You can assemble the bites at least an hour ahead and there’s almost no prep involved.

You’ll Need:

1 baguette, sliced into half inch rounds

1 small container ricotta (the best you can buy)

Thyme (fresh is best but dried works too)

Coarse Salt

1. Toast the baguette slices until they are well browned and crisp.

2. Top each slice with a dollop of ricotta.

3. Drizzle honey over the ricotta.

4. Sprinkle with thyme, salt and pepper.
